4. 15-Minute Pizza Sloppy Joes Recipe
A 15 minute meal, sign me up!
I love having a few ultra quick meals in my back pocket for when I’m tired of cooking. Pizza Sloppy Joes are this. It’s an easy dinner that combines classic pizza flavors with not one, but two layers of melty cheese.

Fried rice is something my partner Derek often makes in our houshold, to use up any leftover rice. My youngest will often eat seconds.

Chicken Rice Soup is so comforting. It reminds me of warm dinners for cool days, soup delivered to me by my mom when I was feeling under the weather and warm hugs.
My kids will ask for it all year round, even in summer, it’s that good. Fresh veggies, chicken and a dash of lemon juice make for a warming meal.

Instant Pots save the day when I’m looking to put food on the table quickly for my hungry, whining kids.

19. Pasta and Peas with Bacon
Back up weeknight meal, here we come.
Pasta and peas with bacon is the ultimate easy, last minute weeknight recipe when you’ve forgotten to hit the grocery store (whoops), and need something on the table quick.
We usually add a bit of olive oil, or just use the tasty goodness of a little of the bacon fat flavour the pasta, along with pepper and grated parmesan cheese.
